Dan Millington a student at The Bournemouth and Poole College recently won The Caterer, Licensee & Hotelier Student Chef of the year 2010 competition.

In the first round Dan, from Bournemouth, had to design a ‘Gourmet Dinner’ menu suitable for 200 covers consisting of 3 courses and not exceeding a limit of £8 per head. After getting through this stage 8 finalists were invited to cook two courses of their menu in a timed competition at the Bournemouth Hotel and Catering Show.

The innovative menu that Dan produced consisted of wood roasted breast of cornfed chicken, poached leg ballontine with a tarrogan chicken mouse, koffman cabbage, potato fondant and a lemon thyme reduction. The Chicken was wrapped in Beech Wood Paper from the Roasting Plank Company that had been pre-soaked in chicken stock. The Beech Wood Paper infuses a range of wood smoky flavours and moistness to the meat.

Gary Kilminster, lecturer and guide for the student commented “Dan worked very hard on his competition purchasing all the ingredients himself and creating the inventive menu. We encourage our students to use new methods of cooking and to create dishes that push their abilities.”
